You wish you had a "meatball" sub!

Tonight's dinner was delightful comfort food that tasted so stinkin' good. I've been seeing a lot of meatball subs on different cooking shows lately, and it's been making me want some. I figured why not? We can have meatball subs, too. :) So, tonight I threw together a marinara sauce and did just that with some frozen veggie "meatballs". I served it with some coleslaw (made with purple cabbage this time) and it was devoured by all.



Meatball Subs

4 tbsp olive oil
1 onion, chopped finely
4 cloves garlic, minced
4 tbsp chopped fresh parsley
2 tsp dried oregano
28 oz can crushed tomatoes
6 oz can tomato paste
1/2 cup white wine
1 tsp salt
1/4 tsp pepper
1 tbsp brown sugar
1 package frozen veggie "meatballs"
mozzarella cheese
hoagie buns

Heat the oil in a skillet and add the onion. Cook until tender, about 5 minutes. Add the parsley, and garlic and cook another minute. Add the oregano, crushed tomatoes, tomato paste, white wine, salt, pepper, and brown sugar. Mix well. Simmer, covered for 15 minutes. Add the frozen "meatballs" and cook for another 15-20 minutes.

Meanwhile, heat the oven to broil. Open the hoagie buns up on a pan with the insides facing up. Add some sliced mozzarella cheese on the top half of the bun. Broil until the buns are starting to become toasted and the cheese has melted. Remove from the oven, and add some meatballs and marinara sauce inside.
