Three is better than none, right?

I haven't had many chances to get this entry done now that my computer cord has seized, but I am completely monopolizing my husband's computer while he's out. Hopefully I can get this done and caught up so it's not so overwhelming.

Let's get right to it. Here are a couple of my favourites from the last couple of weeks. Unfortunately, I didn't take photos of much so I'll be sure to make everything again so I can share.



For date night on Saturday I decided I needed a warm spinach and artichoke dip. Needed! Didn't take much to throw it together and it was divine served with some pumpernickel bread. I could totally eat some of that again now.

Spinach and Artichoke Dip

4 cups baby spinach
1/2 can artichoke hearts, drained and chopped
4 cloves garlic, minced
8 oz cream cheese
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup parmesan cheese + 1 cup
1/2 tsp red pepper flakes

Preheat oven to 350.

Cook the spinach leaves in a wok until wilted, being careful they don't stick.

Warm the cream cheese up in the microwave for about a minute until it's softened.

Mix all of the ingredients (aside from the extra cup of parmesan cheese) together in a shallow casserole dish, mixing well. Top with the remaining parmesan and bake in the oven for about 15 minutes.

On one of our crazy dance days I made a slow cooker lentil soup with some cheese buns. It doesn't look like much, but it was quite tasty and filling so worth recording.

Lentil Soup

1 lb dried lentils, rinsed and picked over
1 qt of vegetable broth
3 cloves garlic, minced
a few handfuls of baby carrots, sliced
1 medium onion, diced
2 stalks celery, sliced
3 cups water
1 tsp dried thyme
1 tsp freshly ground black pepper

Throw it all in a slow cooker and let it cook on low all day long.

I made this creamy slow cooked rigatoni today because it was the dreaded Flyer Day. This allowed everyone to have a quick bite to eat before leaving the house to deliver flyers, and the intention was to have the salad and bread when they got back from flyers. The pasta turned out really well for something so simple, I must say. Much better than the photo looks. ;)

Creamy Slow Cooked Rigatoni

4 cups rigatoni, cooked for about 7 minutes until just tender
28 oz crushed tomatoes
10 oz can cream of mushroom soup
2 tbsp Italian seasoning
1 tsp freshly ground black pepper
1/2 tsp salt
3 cups grated cheddar cheese

Mix together the crushed tomatoes, mushroom soup, Italian seasoning, salt, pepper and cheddar cheese into the slow cooker and stir well to combine. Throw in the already cooked and drained pasta and mix together.

Cook for about 4-5 hours on low.

One of these days things will slow down.

August 2011 is officially nearing it's end. It has felt like a lifetime, and yet, a quick moment at the same time. It never ceases to amaze me how that can happen. Throughout the month, in my complete exhaustion, I felt it would never end. Closing Night for Oz felt like months or years away. Rhianna's dance camp that lasted every night of the first two weeks of August felt like it happened 3 months ago. But, when Closing Night was finally upon us, I was sad. Why did it have to come and go so quickly? Why did the journey have to be over so soon? I felt like I hadn't had the chance to truly enjoy it yet. The last show was incredible. Tiernan really grew into his characters as the weeks passed, and we were blown away. The whole cast was even more amazing than Opening Night and I found myself getting more than a little weepy on multiple occasions. At the end, when the entire room stood up at the very start of the final bow, I had to choke back real tears. As we waited around the back of the theatre for all the munchkins, we parents agreed that it felt like a minute, and a year. We all agreed that we were looking forward to the week of down time before school starts up again, but that it was sad to say farewell to Oz, and all the people who helped make it such a magical experience.




I waited a bit anxiously for my boy to come out for the last time. Would he feel sad and disappointed that it was over? But the minute I saw him trip up the stairs (literally!) from the dressing room and I saw the sparkle in his eyes, my heart was at ease again. He was so completely happy. He came out of there hooting and hollering, saying that this experience he had just lived through was incredible! He ran into the green room to say goodbye to the professional actors and the wonderful behind the scenes crew. He danced up and down the streets with such a lightness about him. He felt on top of the world! I am so proud of this Tiernan-guy of mine. ♥

My poor blog has been quite ignored this summer. I feel so neglectful. I'm sure things will become much more regular once our September routine rolls around. I worked Friday straight through to Tuesday, so Kyle was left to make dinner for us on Saturday and Sunday. My folks took it upon themselves to make a delicious veggie lasagna and a crazy fresh garden salad with apple crisp for dessert for Monday. Saturday was closing night, so it was an easy dinner of caesar salad and grilled cheese with smoked maple tempeh bacon. Sunday my husband made a very yummy Fiorentina Baked Pasta from 101 Vegetarian Dishes that I had been dying to try. He had it ready for when I got home (talk about role reversal!) and I appreciated it so much! That night we had our Date Night In with some sinful Mushroom Canapes (which started out from Simply Appetizers, but I changed a fair bit) and more episodes of LOST. We are so predictable! :) Tonight I made a Pesto Pasta Bake from Half Baked Gourmet Pasta that was unbelievably good! So good I ate two helpings.



Fiorentina Baked Pasta

1 tbsp olive oil
1 lb mushrooms, sliced
3 cloves garlic, minced
salt and pepper, to taste
10 oz spinach and cheese dip (we used a simple recipe - to follow)
1 cup milk
3 oz parmesan cheese, grated
10 oz orzo pasta

Heat oven to 350.

Heat oil in a wok and add the mushrooms. Cook for about 5 minutes. Add the garlic and cook another minute. Season with salt and pepper, and place in a shallow ovenproof dish sprayed with cooking spray.

Mix spinach dip, milk, half the parmesan cheese and the pasta in a bowl. Stir and season with pepper. Pour over the mushrooms in the container. Top with the remaining parmesan cheese.

Bake 45 minutes until pasta is tender and most of the liquid is absorbed.


Spinach Dip
(leaves lots left over for snacking)

10 oz package of chopped frozen spinach, thawed
16 oz sour cream
1 cup mayonnaise
1 package of Knorr vegetable soup mix

Mix it all together, and chill for a few hours.

Mushroom Canapes

30 cremini mushrooms, finely chopped
2 tbsp olive oil
2-3 garlic cloves
1/2 cup mayonnaise
3 tbsp chopped fresh parsley
white pepper, to taste
1/2 cup asiago cheese, grated
butter crackers (we used Ritz)

Saute the mushrooms in oil until tender and liquid has cooked off. Put them in a bowl and combine with the rest of the ingredients. Mix well and serve warm.

Pesto Pasta Bake

1 large bag of rigatoni (900 g)
1 1/2 cups whipping cream
salt and freshly ground black pepper, to taste
1 ball of fresh mozzarella, diced in small cubes (important to use the good stuff!)
2 cups parmesan cheese, grated

Preheat oven to 350.

First make a batch of pesto.

Cook rigatoni according to package directions, until al dente. Drain well and place pasta in a large lasagna pan.

In a separate bowl, mix together the pesto, whipping cream, salt, and pepper until well combine. Pour over the pasta and stir well. Top with the fresh mozza and parmesan cheeses.

Bake 10-15 minutes until brown and bubbling. I broiled mine for a couple of minutes to brown.

Consider yourself updated! ;)

Coming into the month of August, I knew it was going to be a doozy. What I didn't really realize was just how exhausted it would make me. I feel like I'm constantly on the go! Tiernan is busy with rehearsals, Rhianna is busy with her dance camp, Avery's busy wrapping up his soccer season and delivering papers, I'm busy with cleaning the dance studio, chauffering kids, running errands, and working, Kyle's busy with his work, his contract work and his podcast editing, and on the rare day that we don't have anything we make sure to go out as a family and do something fun, relaxing and memorable. It's not as bad as I'm making it sound since I really enjoy being busy, but I do admit to sleeping in until 10:30am once!

On Sunday we found ourselves with no rehearsals, no work for me, no dance camp, and no papers to deliver. I looked at the calendar and saw this blank white space. It was the most beautiful thing I'd ever seen! We decided to jump in the van and take a drive out to Presqu'ile Provincial Park for a picnic of cheese buns, coleslaw, yogurt and brownies. We found ourselves a picnic table near the lake and settled in. The weather was incredible! There are finally some cooler days this week and that day was gorgeous! The skies were very overcast and the air was warm, but not kill-me-now-hot, and you could hear the roar of thunder throughout the whole time we were there.. There were storms going on all around us, but where we sat at the picnic table there was no rain at all. It was like the rain held out until we were finished eating, exploring the water and lounging. When we finally decided it was time to go, the skies opened up and dumped buckets upon buckets of rain onto our van. I love the sound of the raindrops hitting the metal roof. So beautiful!


After visiting the Park, we headed off to pop in at my parents' house for a surprise visit. Luckily they were at home and we settled in for a while watching home movies from just before and just after Rhianna was born. It was great! This coming Sunday is another blank slate for our family. I can't wait for our family time. I am so blessed with these kids of mine and my loving and supportive husband. No matter where our path takes us, I know we'll be just fine because we'll be together.

Dinners have been made for the past week, they just haven't been blogged about. Some of the dinners have been repeats. When I worked all day on Saturday, Kyle was in charge of dinner, so I had planned on him making some vegetarian reubens and a caesar salad using creamy garlic dressing. He did a fantastic job and we all gobbled it up! This is one of those times that I am so thankful that I have this blog - it allows my husband to just look recipes up instead of me trying to find the recipes for him in cookbooks, or my own notebooks. :) Another night we had Make Your Own Grilled Cheese night which was a total hit for our kids! I put out a few different cheeses - old cheddar, mozzarella and smoked cheddar, along with some thinly sliced apples, ketchup (for my ketchup loving daughter!), and then I whipped up some aioli sauce and some pesto sauce. It was a lot of fun! On our free day, the kids treated our whole little family to dinner at Montana's! Aww, they are the sweetest. And it was delicious! In the meantime, here are some of the recipes we had this month so far...



I know it's a terrible picture - I was too lazy to get my flash that night! ;) This is the aioli sauce I made on Make Your Own Grilled Cheese night. Tiernan LOVED this, and couldn't get enough of it.

Aioli Sauce

1/2 cup mayonnaise
2 cloves garlic, minced
2 tsp Dijon mustard
1 tsp lemon juice
1 tsp lime juice
1 tsp olive oil
salt and pepper, to taste

Mix all of the ingredients together in a bowl, and chill for at least 15 minutes.

For Make Your Own Grilled Cheese night, I also made a quick pesto sauce which we all spread on our bread before grilling them. It was a huge hit since everyone enjoyed the pesto!

Pesto

1/2 cup fresh basil leaves
1/4 cup walnuts
2 cloves garlic
1/8 cup parmesan cheese
1/6 cup olive oil
salt and pepper, to taste

Put all of the ingredients into a food processor and blend until smooth.

I got this white bean burger recipe from my friend Jill's blog. I altered it very slightly, and although they were good, none of my kids liked them. :/ I may try them again with red kidney beans instead, but we'll see. I served these with our family's favourite potatoes. Here's my version of the burgers.

White Kidney Bean Burgers
3 tbsps butter
2 onions, sliced
1 head of garlic, roasted
2 cans white kidney beans, drained and rinsed
2 tbsp fresh sage leaves, torn
1 tsp thyme
2 tbsp ground flax seed + 2 tbsp water, mixed into a paste
1 cup seasoned bread crumbs
salt and pepper, to taste
juice from 1/2 lemon

Caramelize the sliced onions in the butter for about 30 minutes or more.

Once the onions are cooked, pulse together the onions, garlic, spices, flax paste and half the kidney beans. Mix the bean paste mixture with the rest of the beans in a large bowl. Add the bread, lemon juice and mix well. Season with salt and pepper.

Cook on an indoor grill until crispy on the outside and heated through.

Date Night In food was positively scrumptious! One of the perks of my job is that when it's slow, I can read the books in the store. This means I get to read cookbooks if I want. I come prepared and bring in a notepad to copy down any recipes that catch my attention. This recipe is one of the ones I jotted down at work. :) It's from the book Grazing, and it's a definite keeper! And yes, it's not the exact recipe - did a bit of tweaking.

Cheesy Black Bean Dip

1 can black beans, drained and rinsed
2 tsp canola oil
1 small onion, finely chopped
3 cloves garlic, minced
1/2 cup salsa
1/2 tsp cumin
1/2 tsp chili powder
1/2 lime, juiced
1 1/4 cups Tex Mex cheese

Mash the beans until chunky. Heat the oil, and saute the onion for 3-5 minutes. Add the garlic, saute 30 seconds. Add the beans, salsa, cumin and chili. Cook 5 more minutes. Remove from the heat. Stir in lime juice and cheese and stir until the cheese is melted. Serve warm.

Last night I made a yummy spaghetti and meatball dinner with some cheddar swirl bread (recipe to follow). Avery, as he sat down at the table, exclaimed, "THANK YOU for making the best meal EVER in the WHOLE WIDE WORLD!" Haha, that boy. The sauce was basically the same as this one, with a few changes.

Spaghetti and Meatballs Sauce

4 tbsp olive oil
1 onion, chopped
5 cloves garlic, minced
28oz can crushed tomatoes
large can tomato paste
1 cup sherry
4 tbsp chopped, fresh parsley
2 tsp dried oregano
1 tsp dried basil
1/2 tsp dried chopped red chilies
1 tsp salt
1/4 tsp freshly ground black pepper
1 tbsp brown sugar
1 package frozen veggie "meatballs"

Cook the onion in the oil for about 5 minutes until tender. Add the garlic and parsley and cook another minute. Add the crushed tomatoes, tomato paste, the sherry and the spices, salt, pepper and brown sugar. Mix well, cover and simmer for 15 minutes. Add the "meatballs" and cook another 15-20 minutes until the "meatballs" are well heated.

Smoked Cheddar Swirl Bread

I made a delicious smoked cheddar swirl bread to go with the spaghetti last night. There is nothing quite like fresh bread, let me tell you! If I had time I'd make fresh bread every single day! I used the recipe for Cheddar-Sriracha Swirl bread and followed it to a tee, aside from changing the Sriracha sauce and cheddar for some smoked cheddar. I see many ways I could change this recipe up to have different tastes... mmm mm mmmmm!

Date Night In with a Cashew and Mushroom Pate.

It feels like I'm never cooking new blog-able food anymore! It's kind of sad. It's been so terribly hot here lately that cooking meals that require the oven or effort sounds painful. Since I last updated we had caesar salad one day, taco salad another day, and then tonight... my husband made crepes! Oh, how I love crepe night. I worked my first full shift on my own today. I opened and closed the store and I have to say I really kind of enjoyed it. I missed my family, but it was fun to organize books, tidy books and leaf through (mostly cook)books. I'm a list person... I make soooo many lists. I have so many notebooks for various different things. One is for shopping lists, one is for menu planning, one is for recipes, one is for budgeting, one is for trip planning, one is for to do lists... you get the idea. I love lists. Working in a bookstore is like bliss for me! The paperwork, the filing of books... I can't get enough of it!

At any rate, it was strange to be gone all day from my kids. I called home at one slow point and it was so nice when I got to hear all the kids emphatically yell "Hi Mummy!" through the phone. Awww, I love them so. It was also really nice to have Kyle making dinner for me for a change. I didn't have to do anything! But of course, I did decide to make our date night food. :) We're cuddling up to watch some Lost and the movie 'Charlie Saint Cloud' while chowing down on some Cashew and Mushroom Pate that I found in my June 2008 issue of Vegetarian Times magazine.




I'm so lucky, I get two men to share my date night with. :)

Cashew and Mushroom Pate

1/2 cup cashews
1 1/2 tbsp margarine
4 cups mushrooms, sliced
1/4 cup chopped onion
2 cloves garlic, minced
1 tsp curry powder
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp salt
2 tsp sherry
2 tsp chunky peanut butter

Preheat oven to 350.

Roast the cashews on a baking sheet for 7-10 minutes, shaking the pan occasionally.

In a wok, melt the margarine, and add the mushrooms, garlic, onion and spices. Cook for 10-12 minutes until the mushrooms are golden and the liquid has evaporated. Add the sherry and cook for another 1-2 minutes.

Add the mushroom mixture, peanut butter and cashews to a food processor and mix until smooth. Cover and chill for at least 2 hours.

Mexican Bean Wraps and Borani

I'm going to jump right into my recipes today because it was a very Monday sort of day. Enough about that, it's not worth my time! Tonight's dinner was Mexican Bean Wraps. I can't remember where I got the recipe way back when, but I've tweaked it a bit. I've made these before and they're always a hit with all three kids (surprising since there are tomatoes in it.. but they disappear into the sauce). Just a head's up, though... these wraps taste better than they look. ;)



Mexican Bean Wraps

3 tbsp vegetable oil
1 onion, sliced thinly
4 cloves garlic, minced
2 tsp chili powder
1/2 tsp cumin
1 tsp tomato paste
1 can kidney beans, drained and rinsed
14 oz can of chopped tomatoes with the juice
salt and freshly ground black pepper, to taste
1 small green pepper, sliced
1 small red pepper, sliced
10 small flour tortillas (I usually use whole wheat, but had white today)
lots of cheddar cheese, grated

Preheat oven to 350.

Fry the onion in 2 tbsp oil for about 10 minutes until it's tender. Add the garlic and spiced, and stir to coat. Add the tomato paste, kidney beans, and tomatoes in their juice. Cook for about 10 minutes (or more) until the juice has reduced. Season with salt and pepper and set aside.

In a separate pan, fry the peppers in 1 tbsp oil until it's tender. Set aside.

Take half of the bean mixture and place it in a bowl. Use an immersion blender to blend it into a paste. Add the peppers to the other half of the bean mixture.

Spread some bean paste over each of the tortilla wraps. Add some of the pepper/bean mixture on top of that. Top with cheese and roll the tortillas up.

Place the tortillas on a baking sheet sprayed with cooking oil. Bake in the preheated oven for about 10-20 minutes until it is heated through and just starting to brown at the edges.

After dinner we watched the Top 22 perform on So You Think You Can Dance Canada as a family. I made a dip called Borani (which I got from a Moosewood cookbook years ago) and brought it out for during the show. It was served with pretzels. :)



Borani

10 oz fresh spinach, well rinsed, stemmed and chopped
1 small onion, chopped
3 green onions, chopped
2 cloves garlic, minced
1/4 cup olive oil
1 tbsp minced fresh dill
1/3 cup grated feta cheese
2 tbsp plain yogurt
salt and freshly ground black pepper, to taste

In a covered saucepan, cook the still damp spinach for a few minutes over medium heat, stirring a couple of times. Once it's limp, but still bright green, remove it from the pan and squeeze out any excess moisture. Set it aside.

Saute the onions, green onions and garlic in the olive oil. When the onions are translucent, stir in the spinach and dill and heat for 2 minutes. Using a slotted spoon and pressing out any extra moisture, transfer spinach mixture to a bowl. Stir in the feta, yogurt, salt and pepper.

Refrigerate for 1 hour and serve.

Date nights, appetizers, breakfast for supper, birthday lunches and decorating cupcakes!


This weekend, like most weekends, has been busy. It's been worth it, though. I live for weekends! Having our whole family together... exploring, visiting, playing, or just doing nothing.

Friday night found Rhianna and I on our own since Kyle took the boys to Goodsell Collectibles to play some Friday Night Magic. Originally Rhi and I were just going to hang out at home, but then I read (on Facebook - what did we ever do without Facebook??) that the Kelly's Irish Dancers were performing at the Waterfront and Ethnic Festival. Awesome! We got there as quickly as we could and headed over to the pavillion just in time. We bumped into Tiernan's teacher from the past year which was a nice surprise - I adore her! The kids dancing were incredible. I love, love, love Irish dancing. I also love Celtic music... it's so comforting for me. Rhianna really wanted to join this dance school on top of the dancing she's already doing with Angela Maracle Studios, but the lessons clash with her Acro class so it's a no-go for now. Maybe next year. She took some Irish dancing when she was super small and was complimented back then for her toe points so I'd like to see how she'd do now. :)

After the Irish dancers finished we wandered around the rest of the festival together. I had told the kids there would be no rides this year because the wrist bands are way too much money when you have three kids. Buuuuuuuttttt.... since Rhianna and I were on a date and it was her birthday weekend.... ;) I bought her enough tickets to go on two rides. We fleeted from ride to ride, measuring to see which ones she was tall enough for this year. She was happy to find out she was tall enough to go on almost all of the rides of her own (except for that darn hang-glider that she has so desperately wanted to go on for two years now! She is *so* close, too.). She chose Zero Gravity (as seen in this picture.. that's her with the yellow shirt and striped skirt) and a Cobra roller coaster. Seeing that smile on her face was so worthwhile! She gave me many hugs and thank yous and told her this birthday weekend was the best ever. Awww. She bought herself some mini donuts and I treated her to a game where she was guaranteed prize. After we got home we cuddled together with a glass of rootbeer, a big blanket and some game shows. It was a perfect date night!

Saturday was mostly a get things done sort of day. We've been having some issues with tiny little ants coming into the house so we needed to deep clean our kitchen (where they were coming in). As per the advice of a friend, we moved all of the food out of our kitchen and it's now in boxes in our basement. Convenient? No. But necessary? Yes. Luckily they hadn't spoiled any of our food! We found a few on the outside of our clover honey, but that's all they touched in our pantry. Under the pantry, though... we found a red sucker... in a package... half eaten by the ants! There was probably a good 20 or so ants stuck in the package! It was so gross. Since clearing that out, along with the rest of our food, we've had far fewer ants in the house. I have my fingers crossed that this is going to work. After our de-ant-ing, we cleaned the house, bathed the dog and then I settled in to watch 'The Blue Butterfly' with the kids while Kyle took a much needed nap.

For dinner I made waffles, mango smoothies and chocolate waffles. The kids were delighted! What kids don't love breakfast for dinner? :) I got the recipe for the waffles from The Garden of Vegan years back, and we like them so much we don't really try other recipes. I did, however, decide to try a new recipe that I found in my September 2010 edition of Vegetarian Times magazine. Dessert waffles! I found them a bit too sweet - I can't handle anything that's too chocolatey (weird, I know!). The kids sure enjoyed them, though! The boys pretty much wolfed them down the minute they hit their plates. How the heck are we going to feed them as they continue to grow? Ahhh!



Nummy Yummy Waffles

1 cup rolled oats
1/2 cup flour
1 1/4 cups soy milk
1 tbsp olive oil
2 tsp maple syrup
1/4 tsp salt
1/2 tsp baking powder

Grind the oat flakes in a food processor until coarse. Add remaining ingredients and blend until smooth. Spoon into a well oiled, hot waffle iron. Repeat until the batter is gone.




Mango Smoothies
(enough to feed my family of five)

1 bag frozen mangoes
milk - read for amounts
4 tbsp yogurt
2 tbsp honey
3 tbsp flax seed

Empty the bag of frozen mangoes into a blender. Add milk until you reach the 750 ml mark. Add the yogurt, honey and flax seed. Blend until smooth. If it's still to thick, add a bit more milk. Continue until the desired consistency is reached.



Double Chocolate Waffles

chocolate sauce:
1/4 cup unsweetened cocoa powder
1/4 cup maple syrup
2 tbsp unsweetened soy milk
1/2 tsp vanilla extract

waffles:
1 1/3 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
2/3 cup unsweetened soy milk
1/2 tsp apple cider vinegar
5 tbsp unsweetened cocoa powder
3 tbsp vegan chocolate chips
1/3 cup dark brown sugar
1/4 cup canola oil
1/2 tsp vanilla extract
icing sugar, for dusting

To make the sauce, whisk together the cocoa powder, maple syrup, soy milk and vanilla in a saucepan over medium heat until smooth. Lower heat, but keep warm.

Whisk together the flour, baking soda and salt in a medium bowl and set aside. Whisk together the soy milk and apple cider vinegar in a glass measuring cup. Let it stand for 10 minutes.

Combine cocoa powder and chocolate chips in a bowl. Whisk in a 1/4 cup of boiling water into the mixture, and blend until smooth. Whisk soy milk mixture into the chocolate mixture. Whisk in brown sugar, oil and vanilla. Whisk in the flour mixture.

Cook on a pre-heated, well oiled waffle iron. Once they are cooked, top with a tbsp of the chocolate sauce and dust it with icing sugar.

Saturday night also brought us an unexpected date night in. Our internet connection has been terrible and sketchy lately. We're going to have to call Bell to come out and make a house call because I'm pretty sure our router is on its last limbs. Oh well, looking on the bright side is always a good idea - Kyle couldn't do any of his contract work OR his podcast. Instead we feasted on some spinach and artichoke cups that I got from my 3 in 1 Vegetarian cookbook (and altered slightly) and watched many episodes of Lost together. So addicted! Kyle really liked the appetizer that I made, but I was a bit iffy. I loved the inside of it, but would have preferred it without the wonton shells. I just ate them by dipping some pretzels in and leaving the shells. Ha!



Spinach-Artichoke Party Cups

non-stick cooking spray
24 3-inch wonton wrappers
1 jar marinated artichoke hearts, drained and chopped
5 oz baby spinach, wilted in a pan
1 cup grated monterey jack cheese
1/2 cup grated parmesan cheese
1/2 cup mayonnaise
2 cloves garlic, minced

Preheat oven to 300. Spray the cups of a mini muffin tin lightly with cooking spray. Press 1 wonton wrapper into each mini cup, and lightly spray with oil. Cook for about 9 minutes, or until lightly golden brown. Remove the shells from the pan and place on a rack to cool.

Combine the artichoke hearts, spinach, cheeses, mayo, and garlic in a medium bowl and mix well.

Fill each wonton cup with the cheese mixture. Place the filled cups onto a baking sheet. Bake about 7 minutes until heated through. Serve immediately.

Today my beautiful Rhianna turned eight years old! I still remember very vividly when Avery turned eight and I couldn't believe I had a child who was already eight years old. And now here I am with my baby at eight! How did this happen? She's an incredible little girl, though. She never ceases to amaze me with her determination and capabilities. Everyone who meets her falls in love with her. The more you get to know her - the more you'll fall in love! Her smile lights up the world. Her laugh makes my heart sing. I don't even know what life was like before her. I love that little girl so much!

We headed out to visit my parents and hold her family birthday out there. Rhianna had requested a barbeque for her birthday and seeing as we don't have one, we opted to use theirs. :) Lunch was delicious, the cupcakes she requested were a hit (and perfect for a BBQ!) and she felt like the princess she should feel like on her birthday. She got some great gifts, and we had fun testing out her new karaoke machine!

Lunch at Rhianna's request consisted of portobello mushroom burgers (altered from the July/August 2009 edition of Vegetarian Times), BBQd potatoes (a la Kyle - baked in the microwave until soft, sliced in half, butter spread on, and sprinkled with Montreal steak spice and seasoning salt and then BBQd), corn on the cob and fruit salad with all of Rhianna's favourite fruits.






Smoky Portobello Burgers

9 small portobello mushrooms, stems removed
olive oil
1/4 cup light brown sugar
5 tbsp sweet paprika
2 tbsp freshly ground black pepper
2 tbsp coarse sea salt
3 tsp garlic powder
1 tsp celery seed
1/2 tsp cayenne pepper
2 medium vidalia onions, thinly sliced
1/2 tsp rosemary
1/2 tsp thyme
1/2 cup prepared bbq sauce
1 cup shredded smoked cheddar cheese
hamburger buns

Toss mushrooms in a bowl with some olive oil (enough to coat) and the brown sugar, paprika, black pepper, sea salt, garlic powder, celery seed and cayenne pepper. Let it sit for a while.

Heat 2 tbsp olive oil in a frying pan and add the onions, rosemary and thyme. Cook, slowly, for 30 minutes until onions have caramelized and are golden, soft and sweet. Remove from heat.

Heat the BBQ and coat the grill with oil. Cook the mushrooms, stem side down, and brush the tops with BBQ sauce. Cook 3 minutes until tender. Flip and grill another 3 minutes. Add the smoked cheese to the centre of each mushroom and cook for another 30 seconds.

Toast the buns on the BBQ, put some barbeque sauce on the bottom bun, add a mushroom, some caramelized onions and the top bun. Enjoy!



A delicious fruit salad of Rhianna's favourites - watermelon, canteloupe, honeydew melon, Bing cherries and purple grapes. :)





These are the cupcakes that I whipped as per Rhianna's request! Corn on the cob! :) How perfect are these for a BBQ birthday? They looked so cute and were so simple to make - bonus! :)

My Saturday... squirrels and food - shocker!

I typically love Saturdays, especially now that we have more down time to have our own adventures. Yesterday we had the kids' bowling wind up - ten pin bowling, plaques and pizza. It was fun for all who came. I'm going to miss everyone from the alley - they became such a regular part of our Saturdays! It was also date night last night. Kyle and I watched an episode of Glee, rented 'Unstoppable' (loved it, and found myself screaming at the television on multiple occasions) and ate the yummiest homemade potato chips (from The Vegetarian Meat and Potatoes Cookbook) and onion dip. Not boring old onion dip from a container.. or made with the chemical laden boxed onion soup mix. This was real caramelized onions... and it tasted better than any onion dip I've ever had before. It's not exactly a light dip with the cream cheese, mayo and sour cream, but how many dips can claim they are truly light? I found the recipe on Eat Me, Delicious, and almost kept it same. I decided I didn't need to oil, though... it has enough fat in it! It worked wonderfully. Yummy!

Unfortunately, yesterday had a terrible feeling lingering above it all day long. In the morning, as I was eating my breakfast, I heard a sound that made me leap from my chair and exclaim, "The babies!". I ran out the back door to see the two baby squirrels I was just visiting with were still there... but there were three crows circling overhead crying out a horrible sound. The babies seemed pretty safe for the time being. I ran to tell Kyle about the crows, and he came up while I ran upstairs to get dressed. My plan was to run out and scare the crows off. I had just gotten into my bedroom when I heard him curse and say "The crows got two of them!" I admit that I did not handle this in the most mature manner. I flipped out. I cried. I screamed. I got mad at Kyle (and feel awful about it!). I cried some more. I couldn't breathe. The two babies the crows got were in my neighbour's driveway. They weren't the ones who were in our backyard feasting on seeds, they were the other two in the litter. I assume they were trying to get up to, or down from, their nest since it's in the tree in front of my neighbour's yard. One of the babies was still twitching, and Avery wanted to run out and save it. How heartbreaking! Kyle gathered the bodies in a box, and took them out to the woods at the end of our street. I cried some more. I stood in the backyard in the pouring rain, prepared to chase any crows away. I, with the help of my mother and husband, came up with a plan for saving the remaining two squirrels. In the Fall I got a big cage from the local Humane Society. Kyle pulled it out of our shed and we tried to coax them into the cage with food, but that didn't work. Then I pulled out the kids' nets and tried to catch them that way. I was successful at trapping them, but they both managed to get away. I could barely sleep last night knowing they were on their own. I am determined today to get them to a safe place. I will then call a wildlife rehabilitator and see if they can help me deal with this in the right way. I feel so much for these babies - they're defenseless, having not been taught the squirrel rules yet. I really don't want to fail them; they deserve a fighting chance. Wish me luck today!

Edited to add! Guess what we just did? We caught Stonewall!!! Well, my hero husband caught him! I could not be happier that we finally have him in a safe place. He has some of the rat food, and we plan on buying more food later. We also have water and a bed in there (complete with towels) as well as a bunch of sticks he can chew up. I've been reading that a lot of items from nature should be left in the cage, so we have plans to gather some. Happy, happy, happy! One down, one more to go!

For dinner last night I made a slow cooker Dal from Fresh from the Vegetarian Slow Cooker. I served it with basmati rice, naan bread and some samosas I made from Vegan with a Vengeance. I wasn't the biggest fan of the Dal - it was pretty bland for me, but everyone else seemed to really enjoy it. Kyle and Avery both added Rooster Sauce to add some heat. I love, love, loved the samosas. They were just little things, but so very satisfying.



Dal

2 tbsp olive oil
1 yellow onion, cut into pieces
2 cloves garlic, peeled
1 tsp peeled and minced fresh ginger
1 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1/2 tsp ground cardamom
1/2 tsp dry mustard
1/4 tsp cayenne pepper
1/4 tsp ground allspice
1 1/2 cups dried lentils, washed and picked over
1-15oz can red kidney beans, drained and rinsed
3 cups water
salt and freshly ground pepper

Pour the oil into the slow cooker, and turn the heat the high.

Puree the onion, garlic and ginger in a food processor until smooth. Place them in the slow cooker and put the lid on.

Stir in the spices (but not salt and pepper) and cook, stirring for 30 seconds.

Turn the setting to low and add the lentils, kidney beans and water. Cook for 6-8 hours. Add salt and pepper before serving.

Samosas

dough:
3/4 cup milk
1/4 cup vegetable oil
1 tbsp apple cider vinegar
about 3 cups all purpose flour (I only used 2 1/2 cups!)
1/4 tsp turmeric
1/4 tsp baking powder
1 tsp salt

filling:
3 medium sized russet potatoes, peeled and cut into 1 inch cubes
2 tbsp vegetable oil plus more for brushing
1 tsp cumin seeds
2 tsp mustard seeds
1 yellow onion, very finely chopped
1 cup carrots, finely diced
2 cloves garlic, minced
1 tbsp fresh ginger root, minced
1 tsp coriander
1/2 tsp turmeric
pinch of cayenne pepper
1 tsp salt
juice of 1 lemon
3/4 cup frozen peas, water run over them to remove any freezer ice

Boil the potatoes in water for about 20-25 minutes, until tender. Drain and set aside.

Preheat oven to 375.

To make the dough:
Pour the wet ingredients into a mixing bowl. Add two cups of the flour, turmeric, baking powder and salt. Begin kneading the mixture, adding more flour gradually until a smooth not sticky dough is formed, about 10 minutes.

Set dough aside and cover with a wet cloth. Begin preparing the filling.

To prepare the filling:
In a large skillet (I used our wok) over medium heat, add the oil, cumin seeds and mustard seeds. The seeds with begin to pop. Allow them to pop for 1 minute, but be careful not to get hit by these popping seeds. Add the carrots and onions and saute for 7-10 minutes until the onions begin to brown. Add the garlic, ginger, coriander, turmeric, cayenne, salt, and lemon juice and saute a minute more. Add the potatoes and mash it all together. Heat it through, and then add the peas and mix well. Set aside.

Divide the dough in half and roll it out thinly. Using a cookie cutter, or a glass upside down, cut 3 to 4 inch circles out of the dough. Place about a 1 or 1 1/2 tsp of the potato mixture into each dough circle and fold it over so it becomes a half circle. The recipe says to wet the dough with water around the edges to make it stick, but mine didn't need it. Continue with the rest of the dough.

Spray a baking sheet with cooking spray. Place the samosas onto the tray, and lightly brush oil on both sides of them.

Cook about 12 minutes on one side, flip them, and cook another 8 minutes. Allow them to cool about 5 minutes before serving.

Oven Baked Potato Chips

3 Yukon Gold potatoes
salt

Preheat the oven to 375. Spray 2 baking sheets with cooking spray.

Wash the potatoes and then slice them paper thin (very important!). Put them into a bowl of cold water for about 5 minutes to remove some of the starch. Lay them out on a towel, and dry the slices completely.

Place them onto the prepared baking trays, taking care not to overlap any of them.

Cook them for 10 minutes on one side, flip them all, and cook another 1o minutes on the other side. They should be starting to brown and be crisp. Serve them right away as they are best eaten this way.

Pan Fried Onion Dip

2 yellow onions, cut in half, and then sliced into 1/8 inch half rounds
4 tbsp butter
1/4 tsp cayenne pepper
1 tsp kosher salt
1/2 tsp freshly ground black pepper
4 oz cream cheese, left on the counter for 15 minutes to half an hour
1/2 cup sour cream
1/2 cup mayonnaise

Heat the butter over medium heat, and cook the onions, cayenne, salt and freshly ground black pepper for 10 minutes. Lower the temperature and continue to cook for another 20 minutes until the onions are browned and caramelized. Allow the onion to cool.

Mix the cream cheese, sour cream and mayonnaise with an electric mixer. Blend well until there are no lumps. Add the onion and mix well.

Hot Mushroom Dip!


What a fantastic birthday party! Avery and Tiernan have the best friends in the world, and they sure helped make this day even more special for the boys. We went to Putt n' Blast for three games of laser tag and our birthday group kicked some serious butt. Even Rhianna and her friend got the hang of it pretty quickly and held their own through the games. All ten kids were all so good while we were there, not to mention during the hour long drive to and from Kingston. I had the pleasure of driving Tiernan and his three friends both directions and listening to their very boy-ish conversations were definitely a highlight for me. I just sat back and smiled. All of the kids raved about the party - most of them saying they now want their birthday parties there (sorry, parents!). The cupcakes I made for the party were a hit with both the kids and all the passer bys who commented on them. My boys smiled from start to finish and went to bed as happy little critters.




This picture makes me laugh. A lot! Avery's best friend's little sister (got that? She is also the friend Rhianna brought along to the party for company) picked a present out for Avery all on her own. Part of that gift was this Hello, Kitty stuffy. When Avery pulled it out of the gift bag I thought he was going to fall over from laughing! It was so funny. :) The best part was when her dad asked Avery who's going to keep the Hello, Kitty stuffy and he said himself! Ave said he'd keep it on his bed. I love that boy. Sure enough, it's on his bed now. Love, love, love it. So cute.

I am happy to report that Tiernan is almost 100% healed now. I think keeping him home for an extra couple of days to rest really helped. He will be seeing our wonderful family doctor on Monday for a follow up, just to be sure. I think I'll drag my husband along with me though.. because he really, really does not look/sound/feel good. Tomorrow should be a much more relaxing day with only a soccer wind up to attend for a couple of hours. Hopefully that will give him more time to heal, too. Luckily our kids are the best ever, and they totally let us sleep in for as long as we want. Oh yes, we are lucky!

Tonight I had a Date Night In with my husband who is sick as sick can be. Nothing stops us! ;) We had a laid back night watching 'Due Date' and eating Hot Mushroom Dip. This dip has been the hugest hit at every potluck, partini and poker night we've hosted. I always make it because it's just that good. I originally got it from me dear friend Amy who got it from her sister-in-law (I think) who found it online somewhere? At any rate, I've only altered it slightly because it was pretty delicious the way it was written.




Hot Mushroom Dip

2 tbsp margarine
1 cup finely chopped onion
4 cloves garlic
3 cups chopped mushrooms
8oz block cream cheese, cut into 8 pieces
1/2 tsp dill weed
1/2 tsp seasoning salt
heavy sprinkling of freshly ground black pepper
1 1/2 cups grated monterey jack cheese
1/2 cup mayo

Preheat oven to 350.

Melt margarine in a large skillet on medium heat. Add onion, mushrooms and garlic. Cook for about 10 minutes until liquid evaporates and mushrooms are golden. Remove from the heat.

Add the cream cheese, dill weed, seasoning salt and black pepper. Stir until the cream cheese melts.

Add the grated monterey jack cheese and moyo and mix well.

Bake for 30 minutes until the top is browned and it's heated through.


I serve it with some Greek pitas that I toast in the oven brushed with an olive oil/garlic powder mixture. Deeeeeelicious!

I really need to head to bed so I can join my husband. It's after midnight which means it's officially May! Blessed Beltane! Some milk is out for the fae folk... :)
