We are having so many slow cooker days lately.

What a week!

Between work for me, work for Kyle, dance for Tiernan and Rhianna, soccer for Avery, flyers for all three kids, paper delivery for Ave, a sickness that grabbed hold of myself and Kyle (headachey, drained, sick tummy), a sick rat, a cat with seizures, a mountain of laundry and a son with a broken heart.. I'm knackered. Completely and utterly exhausted. My meals this week have been less than inspiring. Monday? Fried egg sandwiches with fruit. Tuesday? Veggie dogs, veggies & dip and fruit. Wednesday? Veggie wraps (herd and garlic cream cheese, broccoli slaw, shredded carrots, fried mushrooms, spinach - rolled up) and a two cheese salad with balsamic vinegar dressing. Definitely nothing bloggable.


Today I was able to get back to my normal menu and threw together a simple slow cooker dish from The Gourmet Vegetarian Slow Cooker. I made the butternut squash Thai green curry with some basmati rice, and I warmed up some Naan to go with it (I know, doesn't really go with the Thai food, but it worked!). I wasn't in love with the dish, but it was gobbled up by all three of my boys. Kyle's favourite thing in the world is curry, so he's pumped that there's leftovers for lunches. I've made better curries, and I think I might try tweaking this one a bit. For me it just seeemed like it was missing something. I think it was more veggies... I like many veggies in my curries.



The boys headed out tonight to draft some Magic the Gathering at our local gaming store so I braided Rhianna's freshly showered hair into a bunch of little braids - something she's wanted to do for a week or two now, but we never got around to. She's pretty excited to see how it looks tomorrow when she takes them out. I cherish our little mother-daughter moments. :)



Slow Cooker Butternut Squash in Green Curry Sauce

1 butternut squash, peeled, seeded and cubed
1/2 cup water
2 tbsp chopped yellow onion
2 cloves garlic, peeled
1 inch piece fresh ginger root, peeled and coarsely chopped
1 serrano chile, stemmed, seeded and deveined (couldn't find one here so I used jalapeno)
3/4 cup fresh cilantro leaves
1 tsp sugar
14 oz can unsweetened coconut milk
salt, to taste

Place the squash in the slow cooker with the water and cook about 3 hours on low until tender.

In a blender at remaining ingredients and blend until smooth. Add to the slow cooker and cook on low for another 20-30 minutes.

Serve over rice.

No food, only photos.

We enjoyed our very last beach day of the summer! We're trying to jam pack as much fun as we can into this weekend (aside from my working all day tomorrow!), and we started out really well.. minus a couple of mishaps. We met up with some friends of ours at North Beach and the kids had a blast playing in the water and sand. We barely saw them at all... except for my poor fair skinned, light haired, Irish Tiernan. Halfway through our beach visit he started to melt. He went from happy and having fun making sandcastles to lying in the sand beside me whimpering about how hot and cold (how contradictory!) he was. Eventually I had to cut the fun for the rest of the group and get him out of the sun. Our family just doesn't handle the heat and sun well - especially Tiernan. We weren't made for this kind of weather! Oh well, we still had a lot of fun while it lasted. Halfway to Slickers in Bloomfield (best ice cream, ever!), Tiernan was feeling almost 100% better. Phew!

Guess what I get to do tomorrow? I get to go to work looking like a tomato. Classy, yes? Apparently, I never learn. Typically, I wear sunscreen. Today I decided it was overcast and nearing Fall and surely it wouldn't be all that warm. Wrong. We got to the beach and it was bright and sunny with the bluest of skies. The humidex was just under 40C. Whoops. Wear your sunscreen, friends! More than an SPF of 4, too (*coughKellycough*)! Haha! But then again, you may be one of those lucky tanning type people. If you are I am sticking my tongue out at you in pure green faced jealousy!


All in all, it was a good start to the weekend. Looking forward to more fun crammed into the next few days - rain or shine! :)

Today was bad, but the salad and dancing was great!

Today was a horrible, terrible, awful, bad day! Seriously. Very! I was late taking Tiernan to his matinee and late picking him up. I have NO CLUE how that happened because I am one of those organized-everything-written-down kind of people. That said, if I am dragging my husband along, I tend to be late. It runs in his family! The curse! And if it's important.. not usually late. This play? Hadn't been rushed once! Until today. I could die of embarrassment. For real. If it was possible, I likely would.

Moving on... most of the day sucked. BUT! Tonight we headed out to Marmora for Classic Cruisers. A group of the girls who dance at Angela Maracle Studios put on a beautiful dance parade. I loved it! Nothing beats a poodle skirt! ;) I have a load of photos to upload to Facebook, but for now here are a couple of my girl.

Dinner was on the go tonight. We had pretty much zero time to sit and have dinner, so I made some chickpea salad sandwiches (with some Guyanese curry instead of the dill, and the beans more pureed with a bit more mayo) on the softest onion buns and a delicious salad that I threw together. We ate it in the van on our hour long ride to Marmora. Fun. At least the scenery was pretty! Tiernan ate the salad and sandwich at the house of some friends of ours - huge thanks to them for letting him hang out and getting him to Oz on time for the first time today! :P



Craisin-Almond-Feta Salad

4-5 cups baby spinach
1/2 cup sliced almonds, toasted for 5-7 minutes in the oven
1/2 cup craisins
1/2 cup crumbled feta cheese
1/2 thinly sliced red onion
3 tbsp red wine vinegar
3 tbsp olive oil
4 tsp honey
1 tsp coarse Dijon mustard
salt and pepper, to taste

Mix the vegetables, craisins, almonds, and cheese in a bowl. In a separate small bowl, mix together the vinegar, oil, honey, mustard and salt & pepper. Combine well. Drizzle the dressing over the salad and toss well to coat.

It can't really be August 20th, can it?

Any times in the past that I've said I was busy... yeah.. ignore those. August is very, very, very busy this year! Between dance and Oz and soccer and work and visits .. I don't know if I'm coming or going anymore. In fact, I'm attempting to get this blog finished within 15 minutes so I can go pick Tiernan up from his second play today. Due to this crazy tornado of a month, we've been eating a lot of dinners that I've already blogged about. Like portobello mushroom pasta, veggie lasagna, taco dip, creamy asparagus pasta, caesar salad, (curried) chickpea salad sandwhiches, paninis and simple things like poutine and veggies and dip. You know - all the things I can make with my eyes closed. I do have a couple of super simple recipes to share, as well as one idea rather than recipe.

First though! Photos of some of our latest adventures.

Opening night of The Wizard of Oz at the Empire Theatre has come and passed! The show (which we attended) was fan-freaking-tastic! The cast - both professional and young company played their hearts out. The costumes, the singing, the story - all of it was amazing. The girl who plays Dorothy (Emma) is a friend of ours, and she is one talented young lady! She could knock your socks off with her triple threat talent - singing, dancing and acting. If you're in the area, please go to the show. There are still shows Sunday the 21st until Saturday the 27th with the exclusion of Monday the 22nd. Some days there are both the matinee and evening show, so check the website out and buy your tickets! It's so worth it.



On opening night we picked up some sunflowers (we have always called him our Sunshine) and a Wizard of Oz book to give to our little thespian. He also got a lollipop from one of the wonderful women who looks after all these munchkins. It was so thoughtful - a lollipop for the boys in the Lollipop Guild! I love it. Tiernan was adorable up on that stage as a munchkin, creepy as can be as a flying monkey and so graceful as snow. He did so well! We are incredibly proud of him - more than ever!



On the second day of Oz my sister Carole and her kids came into town to watch the play and then came over for dinner. What better place for the kids to eat than on the floor, picnic style? :)



The next day we held our tradition of a Pizza Pool Party at the hotel. The best part? They stayed at our hotel, the Best Western. We lived in that hotel for a month when we first moved here and it still feels like home to us. The smells from the cleaner. The perfect swimming pool - warm, not too deep, big floor to ceiling windows to let the light in. The breakfast/dining room that had the microwave we needed to use daily. I still remember warming my tea up there after getting the kids to school and then curling up in the big comfy bed in our suite watching MTV shows while I got over H1N1. I loved that hotel! If it hadn't cost that much to stay I might never have left. ;) I just wish our favourite girl had been working at the desk that day! I saw her leaving just as we were pulling in. She was awesome!

All the cousins - best friends, always! These kids are so very close. It's an amazing thing to witness! (Their faces look a bit sad, but that's because it was time to say farewell.)

And now for the few food items I wanted to blog about. One is the Thai Chick-Un Pizza from Eat Drink & Be Vegan (very scrumptious!), one is some herbed buttermilk biscuits (very comforting!) and the other is english muffin pizzas (easy and great for snacks or school lunches!). Sometime I will blog the two different beer-y pizza crusts Kyle made in our bread maker (that we got from my Dad - thank you!). Right now is not the time, though! It's time for Lost.



Thai Chick-Un Pizza

Thai Sauce:

2/3 cup natural peanut butter
1/3 cup ketchup
2 tbsp rice vinegar
2 tbsp soy sauce
2 cloves garlic, quartered
1 1/2 tbsp fresh chopped ginger
1/4 tsp crushed red pepper flakes
1/4 cup light coconut milk
1-2 tbsp water
1 1/2 - 2 tsp agave nectar

toppings:

1 cup cooked chickpeas
1 red bell pepper, thinly sliced
3/4 cup pineapple chunks
1/2 cup bean sprouts

Preheat oven to 350.

Mix all of the sauce ingredients together and blend with an immersion blender until smooth. Spread the sauce over your pizza shell. In a bowl, lightly flatten the chickpeas. Sprinkle them over the crust. Add the bell pepper and pineapple over the crust as well. Bake 17-20 minutes. Remove from the oven and add the bean sprouts.

Buttermilk Herbed Biscuits

2 cups flour
1 tbsp baking powder
1 tsp baking soda
1/4 salt
1/2 cup butter
1 tsp dill
1 tsp garlic powder
1/4 tsp freshly ground black pepper
3/4 cup buttermilk

Preheat oven to 350.

Mix all of the dry ingredients in one bowl. Cut in the butter and mix until crumbly. Add the buttermilk and mix well. Knead for a few minutes on a floured surface. Roll dough into round golf sized balls (or slightly bigger) and place on an ungreased baking sheet. Bake for 10-12 minutes.

A really great fun food dinner is english muffin pizzas. I think these will be a regular lunch food for the kids this year. Make some sauce at the beginning of the week and keep it in the fridge so I can easily whip some up in the morning before school. The kids will love it!

To make them just toast your english muffin, and put them on a baking sheet. Add your sauce, toppings of choice, cheese and then cook it in a 350 oven until the cheese starts to turn brown in places.

For the sauce this is what I do:

1 large can tomato paste
1/8 cup olive oil
3 tbsp pizza spice
pinch of red chilies
dash of sugar

Mix it up, store it in the fridge for up to a week. If you like your sauce thinner, add water. We like ours thick!

**Edited to add - I did not get this done in 15 minutes as I'd hoped. I started this 2 hours ago. Ha!**

A light feast for a(nother!) very hot day.

What a very long day! The kids and I spent the entire morning running errands. First it was a stop to drop something off with someone, followed by a trip to the gas station (grrrr... 1.319/ litre!), then the library to drop some books and DVDs off & get some new ones (yay for discs 5, 6 and 7 of Lost season 1!), followed by a stop at the theatre to pick up our Harry Potter tickets for tomorrow (what a pain THAT was) and lastly picking up some bread at the grocery store. After a quick lunch of sandwiches, we all headed out to deliver flyers. No, not a few flyers. Nope! We had to deliver a good 150 flyers, plus the regular papers. Not only did we have to deliver 150 flyers, but we had to deliver them in three different areas. AND it was at least mid-thirties (celcius) with the humidex. Can you say hot, sweaty, tired kids? They held up pretty well considering, but there were definitely a few moments. Ironically enough they were closer to the beginning. Strange kids! At one point in our travels we were approached by an elderly man who reamed me out telling me I shouldn't be forcing the kids to work and I'd better be paying them, yadda yadda. Wasn't expecting that. Why is it that people judge so freely when they know absolutely nothing about the situation? It's so sad.

Needless to say, there wasn't a lot of time to breathe, never mind to make dinner by the time we got home and had showers. I had dry fried some tofu and marinated it in our very favourite marinade (!!!!) in the morning, so I threw together some mango summer rolls and Thai dipping sauce (from Vegan with a Vengeance) to go with it. We enjoyed our light feast while playing a family game of the Game of Life (haha.. again...) and now we're sitting down for some SYTYCD. All in all, a good day. The best part of the day? It's Kyle's Friday! He has tomorrow and Monday off! Yahhoooo!



Mango Summer Rolls

1 mango, peeled and sliced into matchsticks
1 cup bean sprouts
1/2 cup fresh cilantro leaves
4 oz very thin rice noodles
1/4 cup roasted peanuts, very finely chopped
20 rice paper wrappers
Thai dipping sauce (recipe to follow)

Boil a medium pot of water. Once it started to boil, turn the heat off and put the noodles in. Let them soak for 10 minutes before taking them out and rinsing thoroughly in cold water.

Have a small pot of hot water ready on the counter along with a cutting board. Place a rice paper wrapper into the pot for 30 seconds to a minute until it's soft. Take it out, place it on the cutting board and start filling it. Add some rice noodles, some peanuts, cilantro leaves, a few bean sprouts and mango. Roll it up, making sure to fold the edges in. Keep chilled until ready to eat.


Thai Dipping Sauce

1/4 cup rice vinegar
1/4 cup water
1 tsp Asian chile oil
1 clove garlic, minced
3 tbsp chopped roasted peanuts
1 1/2 tsp sugar

Mix together in a small bowl and chill until ready to eat.

If you have never tried this dipping sauce from The Ginger People, run out to your local grocery store and get some! Seriously! I'm addicted to this stuff. Kyle and I used to be able to get it in Winnipeg, and then they stopped making for some reason. Can you say SAD? When I was at our local store last week I almost squealed out loud when I saw this sauce sitting on the shelf! It's so freaking good! I love all of The Ginger People sauces, but this is BY FAR my favourite! Mmmm. I opted for this sauce with my summer rolls. ;)

Sometimes you just need melty peanut butter.

Have you ever had one of those days where things go wrong all stinkin' day long? Not really, terrible, horrible things, but little things that keep piling up until you decide to just do nothing for the rest of the day. That was yesterday for me. Because of that, this picture shows you what was for supper last night. Kyle made the kids fried egg bagel sandwiches and I sat down, on my own, and ate an everything bagel smothered in melty peanut butter. And you know what? It was delicious and just what I wanted. Now why was yesterday so bad, you ask.... well.. lemme tell you in bullet form...

*I had to drag my kids out of bed for the last day of school. (I know, you're thinking no big deal.. but this should have been an indicator of the day to come.)

*Before school I had to bake cookies for both Avery and Rhianna's classes at school. They had both asked me the night before, but I hadn't had time or energy after our busy evening. I'm quite the cookie baker and have it down to a fine art, so I knew it wouldn't take me long to get it done in the morning. And it didn't. EXCEPT.. apparently, I should not double my Skor Bit cookie recipe because the cookies were a big ol' FAIL! Puffy and thick and practically bread like. So much for my "expert cookie baking abilities"! (I almost wonder if I wasn't awake enough when I made them and miscounted my flour?) So, I tossed two whole batches of cookies. Not only that, but I also ran out of flour, brown sugar, cane sugar AND vanilla. This meant I couldn't make any more cookies until after I visited a grocery store.

*Sometimes, if my kids (mostly the boys - Rhi isn't interested) have finished their morning chores and have some time before the bus comes, I let them play some DS. The rule is that they can't play any games that are unable to shut down in an instant. They know this. For some reason, though, Tiernan decided to play a Pokemon game and enter a battle just as we were about to head off to the bus. And when I called them to go to the bus that morning it wasn't an "oh, we're leaving for the bus in five minutes" call, it was a "we need to go to the bus right freaking now!" call. I told him he didn't have a choice, he had to shut it down right then and he lost it. Completely freaked out yelling and telling me he just couldn't. Okay, no. No, no, no. This just wasn't the morning to pick a fight with me. I had a terrible Mummy moment with absolutely zero patience. The DS is now hidden in the garage and Tiernan was left in tears because he lost everything he did on his game that day. The good news is, we got to the bus in time.... but I was left feeling horrible Mummy guilt for giving the kids a bad start to their last day of the school year.

*After taking Tibbs for a walk, I headed out to get some ingredients for the cookie baking I still had to do. Only... wait a minute, where are my keys? I looked high and low. They were not in any of the places I would ever put them. They were also not in any of the places I wouldn't put them. They just weren't in the house. I retraced my steps from the previous night and was positive I locked them in the van. I had to call Kyle at work to ride his bike home to unlock the van to see if they were in there. Of course he had a super busy day, too. That figures, right? Anyway, he was my hero, as always, and we did indeed find the keys in the van between the two front seats.

*Once I finally get to the store and gather up the ingredients, I go to stand in a very long line up. It seemed like everything was going wrong for the cashier, too. Must have been one of those days for more than just me. As time is ticking, I start to panic. I realize I don't have much time to bake the stinking cookies so I do something I rarely do.... I put the ingredients back and go find some store bought goodies. In this process I clumsily knock down a bunch of Chips Ahoy cookie bags. Sigh.

*By this time I have an incredible migraine. My head is throbbing, and I'm super sensitive to both light and sound. I tried everything, and nothing made it go away until much later in the day when the skies cleared... pretty sure it was air pressure related. Or possibly stress!

*After I made the deliveries to the school I headed home and decided to sit on the couch and do nothing. Except, I can't really do nothing. I figure a couple of loads of laundry can't hurt. What can go wrong with laundry? I marched into the laundry room, put a load in the washer and sat down on the couch. I usually sit with my legs curled off to the side and this was no exception. My calf got itchy so I started rubbing my calf with my foot. I then felt something wet and assumed it was a few drops of water from the washing machine. I kept rubbing my feet and legs together until I realized that something just didn't feel right. I pulled back the blanket I had on me and found that my legs and feet were covered in cat crap. I'm not kidding. Oh, how I wish I was kidding. Alas, no joking around for me. I had smeared a piece of crap that I assume was left out of the litterbox (which is right next to my laundry detergent) and was then stuck to my arch. I know it must have been the arch because there was no sign of it on the floor, at all. It also must have been fresh and warm because I sure didn't feel it. And let me tell you - it wreaked! Oh wow. That was unbelievable. I cried in the shower. I felt so defeated.

*You know what I did until my kids got home? NOTHING. This time I really didn't do anything. I left the laundry in the machine and didn't move. I wrote out my next two week menu, watched some TV and puttered about on the computer.

*And then my kids got home. My kids have the best bus driver in the world, and she gave them each a jumbo freezee to celebrate the last day of school. Naturally, both boys were finished eating theirs, but my slow poke daughter still had her melty orange one in her hands when she got home. It was probably over half full. So, we are all talking about our days. Theirs went really well, and I told them about my horrible day. They laughed at my cat crap story and told me I should play some Wii to relax (haha). That's when Rhianna's freezee decided to flip itself over and empty itself all over my lap and my favourite spot on the couch! Yes, really. Orange on everything. My shirt, my capris, my couch. I didn't know whether to laugh or cry. Tiernan ran and got a towel to clean everything up, and Rhianna ran and got me a new outfit to change into.

*Luckily, aside from some tired, whining kids, the day did not get any worse. Thank goodness. Don't know how much more I could have handled.


Today has been a brand new day and was one million times better than yesterday! The first day of summer holidays was filled with blue skies, trips to two different libraries, a few drives out into the country, and a bit of shopping. It was busy, but also nice. I love having my kids home with me. They truly are the best company I could ask for. They are so smart, so funny and they teach me little things on a daily basis. Rhianna is off at a birthday party sleep over with a friend at her trailer. It's so strange not having her here. I miss her a lot! This is the first time she's slept at a house of someone who wasn't family. It's a big deal! I know her friend's mother is taking really good care of her, and we are looking forward to spending time with them tomorrow at the lake.

Tonight I was on my own for the first time in a very long time. I started the evening out with a walk on the trails with my pupperoo. It's the perfect time of day for it. The air is cooler, the sun lights everything up in this perfect brilliant hue, and the people are all smiling. Tibbs mingled with some dogs and I mingled with some humans. :) The funniest moment was when I took the picture on the left.. I had it on self timer (obviously) and it was flashing and beeping. As we were walking away a guy on a motorized chair comes over in a big panic thinking I was settling off a bomb. Hahahah! Yup, that's me. I look like such a threat. ;)

At one point during our walk, we sat down at this bench in silence, enjoying the view. Tibbs lay down and seemed to taking it all in. The geese with their babies. The boats on the Bay. The breeze in the air. I sure love that doggle of mine. ♥ When we came home I got some stuff ready for our Canada Day adventures and sat down to watch SYTYCD and 16 & Pregnant. All in all, a good evening. No complaints here after my day yesterday! ;)

Nothing exciting to report for dinner today. We had some mushroom, monterey jack cheese and salsa stuffed quesadillas with a side of steamed broccoli covered in a scrumptious cheese sauce! Who doesn't love broccoli... especially covered in cheese sauce!? Unfortunately I really like it and had two large helpings of it... and now my stomach is paying for it. You know what they say about broccoli.. especially for those of us who are physically unable to burp! Eep!

Cheese Sauce

3 tbsp butter
3 tbsp flour
1/2 tsp salt
heavy sprinkling of freshly ground black pepper
1 1/2 cups milk
1 cup grated cheese (tonight I used a combination of monterey and cheddar.

Melt the butter in a small saucepan. Remove from heat and add the flour, salt and pepper. Stir well to combine. Add the milk and put it back on the heat. Stir continuously for about 5 minutes, until the sauce has thickened. Remove from the heat and add the cheese. Stir until smooth and then serve immediately.

My Saturday... squirrels and food - shocker!

I typically love Saturdays, especially now that we have more down time to have our own adventures. Yesterday we had the kids' bowling wind up - ten pin bowling, plaques and pizza. It was fun for all who came. I'm going to miss everyone from the alley - they became such a regular part of our Saturdays! It was also date night last night. Kyle and I watched an episode of Glee, rented 'Unstoppable' (loved it, and found myself screaming at the television on multiple occasions) and ate the yummiest homemade potato chips (from The Vegetarian Meat and Potatoes Cookbook) and onion dip. Not boring old onion dip from a container.. or made with the chemical laden boxed onion soup mix. This was real caramelized onions... and it tasted better than any onion dip I've ever had before. It's not exactly a light dip with the cream cheese, mayo and sour cream, but how many dips can claim they are truly light? I found the recipe on Eat Me, Delicious, and almost kept it same. I decided I didn't need to oil, though... it has enough fat in it! It worked wonderfully. Yummy!

Unfortunately, yesterday had a terrible feeling lingering above it all day long. In the morning, as I was eating my breakfast, I heard a sound that made me leap from my chair and exclaim, "The babies!". I ran out the back door to see the two baby squirrels I was just visiting with were still there... but there were three crows circling overhead crying out a horrible sound. The babies seemed pretty safe for the time being. I ran to tell Kyle about the crows, and he came up while I ran upstairs to get dressed. My plan was to run out and scare the crows off. I had just gotten into my bedroom when I heard him curse and say "The crows got two of them!" I admit that I did not handle this in the most mature manner. I flipped out. I cried. I screamed. I got mad at Kyle (and feel awful about it!). I cried some more. I couldn't breathe. The two babies the crows got were in my neighbour's driveway. They weren't the ones who were in our backyard feasting on seeds, they were the other two in the litter. I assume they were trying to get up to, or down from, their nest since it's in the tree in front of my neighbour's yard. One of the babies was still twitching, and Avery wanted to run out and save it. How heartbreaking! Kyle gathered the bodies in a box, and took them out to the woods at the end of our street. I cried some more. I stood in the backyard in the pouring rain, prepared to chase any crows away. I, with the help of my mother and husband, came up with a plan for saving the remaining two squirrels. In the Fall I got a big cage from the local Humane Society. Kyle pulled it out of our shed and we tried to coax them into the cage with food, but that didn't work. Then I pulled out the kids' nets and tried to catch them that way. I was successful at trapping them, but they both managed to get away. I could barely sleep last night knowing they were on their own. I am determined today to get them to a safe place. I will then call a wildlife rehabilitator and see if they can help me deal with this in the right way. I feel so much for these babies - they're defenseless, having not been taught the squirrel rules yet. I really don't want to fail them; they deserve a fighting chance. Wish me luck today!

Edited to add! Guess what we just did? We caught Stonewall!!! Well, my hero husband caught him! I could not be happier that we finally have him in a safe place. He has some of the rat food, and we plan on buying more food later. We also have water and a bed in there (complete with towels) as well as a bunch of sticks he can chew up. I've been reading that a lot of items from nature should be left in the cage, so we have plans to gather some. Happy, happy, happy! One down, one more to go!

For dinner last night I made a slow cooker Dal from Fresh from the Vegetarian Slow Cooker. I served it with basmati rice, naan bread and some samosas I made from Vegan with a Vengeance. I wasn't the biggest fan of the Dal - it was pretty bland for me, but everyone else seemed to really enjoy it. Kyle and Avery both added Rooster Sauce to add some heat. I love, love, loved the samosas. They were just little things, but so very satisfying.



Dal

2 tbsp olive oil
1 yellow onion, cut into pieces
2 cloves garlic, peeled
1 tsp peeled and minced fresh ginger
1 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1/2 tsp ground cardamom
1/2 tsp dry mustard
1/4 tsp cayenne pepper
1/4 tsp ground allspice
1 1/2 cups dried lentils, washed and picked over
1-15oz can red kidney beans, drained and rinsed
3 cups water
salt and freshly ground pepper

Pour the oil into the slow cooker, and turn the heat the high.

Puree the onion, garlic and ginger in a food processor until smooth. Place them in the slow cooker and put the lid on.

Stir in the spices (but not salt and pepper) and cook, stirring for 30 seconds.

Turn the setting to low and add the lentils, kidney beans and water. Cook for 6-8 hours. Add salt and pepper before serving.

Samosas

dough:
3/4 cup milk
1/4 cup vegetable oil
1 tbsp apple cider vinegar
about 3 cups all purpose flour (I only used 2 1/2 cups!)
1/4 tsp turmeric
1/4 tsp baking powder
1 tsp salt

filling:
3 medium sized russet potatoes, peeled and cut into 1 inch cubes
2 tbsp vegetable oil plus more for brushing
1 tsp cumin seeds
2 tsp mustard seeds
1 yellow onion, very finely chopped
1 cup carrots, finely diced
2 cloves garlic, minced
1 tbsp fresh ginger root, minced
1 tsp coriander
1/2 tsp turmeric
pinch of cayenne pepper
1 tsp salt
juice of 1 lemon
3/4 cup frozen peas, water run over them to remove any freezer ice

Boil the potatoes in water for about 20-25 minutes, until tender. Drain and set aside.

Preheat oven to 375.

To make the dough:
Pour the wet ingredients into a mixing bowl. Add two cups of the flour, turmeric, baking powder and salt. Begin kneading the mixture, adding more flour gradually until a smooth not sticky dough is formed, about 10 minutes.

Set dough aside and cover with a wet cloth. Begin preparing the filling.

To prepare the filling:
In a large skillet (I used our wok) over medium heat, add the oil, cumin seeds and mustard seeds. The seeds with begin to pop. Allow them to pop for 1 minute, but be careful not to get hit by these popping seeds. Add the carrots and onions and saute for 7-10 minutes until the onions begin to brown. Add the garlic, ginger, coriander, turmeric, cayenne, salt, and lemon juice and saute a minute more. Add the potatoes and mash it all together. Heat it through, and then add the peas and mix well. Set aside.

Divide the dough in half and roll it out thinly. Using a cookie cutter, or a glass upside down, cut 3 to 4 inch circles out of the dough. Place about a 1 or 1 1/2 tsp of the potato mixture into each dough circle and fold it over so it becomes a half circle. The recipe says to wet the dough with water around the edges to make it stick, but mine didn't need it. Continue with the rest of the dough.

Spray a baking sheet with cooking spray. Place the samosas onto the tray, and lightly brush oil on both sides of them.

Cook about 12 minutes on one side, flip them, and cook another 8 minutes. Allow them to cool about 5 minutes before serving.

Oven Baked Potato Chips

3 Yukon Gold potatoes
salt

Preheat the oven to 375. Spray 2 baking sheets with cooking spray.

Wash the potatoes and then slice them paper thin (very important!). Put them into a bowl of cold water for about 5 minutes to remove some of the starch. Lay them out on a towel, and dry the slices completely.

Place them onto the prepared baking trays, taking care not to overlap any of them.

Cook them for 10 minutes on one side, flip them all, and cook another 1o minutes on the other side. They should be starting to brown and be crisp. Serve them right away as they are best eaten this way.

Pan Fried Onion Dip

2 yellow onions, cut in half, and then sliced into 1/8 inch half rounds
4 tbsp butter
1/4 tsp cayenne pepper
1 tsp kosher salt
1/2 tsp freshly ground black pepper
4 oz cream cheese, left on the counter for 15 minutes to half an hour
1/2 cup sour cream
1/2 cup mayonnaise

Heat the butter over medium heat, and cook the onions, cayenne, salt and freshly ground black pepper for 10 minutes. Lower the temperature and continue to cook for another 20 minutes until the onions are browned and caramelized. Allow the onion to cool.

Mix the cream cheese, sour cream and mayonnaise with an electric mixer. Blend well until there are no lumps. Add the onion and mix well.

One of those days.

Today was one of those days. You know the kind. The kind where you wake up after a long, long night of not sleeping because of cats smothering you and daughters lying beside you grinding their teeth and psoriatic arthritis flaring up in your knees and elbows (don't I feel like an old lady!). The kind where your day starts off normal, quiet and then becomes busy as can be. The kind where you'd really like to climb under the covers to try to catch up on sleep, but there's no time to do so. The kind where you get none of the things done from the always long to-do list. The kind where you go into the kitchen to make your dinner and you realize you don't have a key ingredient. The kind where you email your husband saying 'I QUIT!'.

Yes, today was just like that. So when I realized I'd forgotten to buy that key ingredient at the store this morning, I threw my hands in the air. Then, I emailed my husband again saying I was not going to cook dinner. Today, we ordered pizza and it was perfect. I was able to de-stress, eat, and take the kids to the dance studio (where my day flipped right around with many laughs - shocker!).

My friend, Natasha, asked me about easy/little prep meals. I definitely have many of those, and today's meal was *supposed* to be one of them (pad thai). Being a vegetarian means that I'm often finding myself doing a lot of chopping. I try to do that chopping earlier in the day (or the night before), so that when it comes time to actually cook the meal, it's ready to assemble. I went through my entries and tagged all the simple ones with 'quick and easy', and I'll continue to add to that as I update here. In the meantime, these are my meals that take little time to prepare. There is some chopping, but aside from that, it's pretty minimal.

She also challenged me to find quick desserts, so I'm really going to have to think about that one. My desserts tend to be a bit time consuming and we don't have them terribly often. Thanks for the ideas, Nat! :)

The madness that was my past few days.

What a crazy past few days! I won't get into all of it, but let's just say it included all of the following:

-a sleep over with my lovely nieces and nephew!
-a delicious Starbucks chai care of my sister!
-a flood in my laundry room that looked and felt like a river flowing through!
-turned out, our (rented, thankfully) water tank leaked!
-water in both the laundry room as well as the rec room!
-the water missing one of our computers by a few centimeters!
-a change of plans for the all of Friday!
-a broken toilet seat!
-a sick stomach!
-headaches!
-a very late night and a very early morning so we could get into Toronto by 9am!
-a Magic tournament for the boys of the family!
-Tiernan's first tournament!
-Comic Con characters everywhere!
-a daughter who really, really, really wanted to go to Comic Con!
-a long walk to downtown Toronto for Rhianna and I!
-a trip up the CN Tower!
-a most delicious mother-daughter lunch at the top of the Tower!
-the best waiter (ever!), named Babu! He spent most of the time talking to me!
-Avery going farthest in the tournament out of Tiernan, Kyle and him!
-meeting some pretty cool guys who I hear about all the time from Kyle!
-getting stuck in traffic in downtown Toronto!
-not being able to find a place to eat dinner... with 5 starving people!
-finally finding Licks at 8:30pm, and eating the most delicious poutine and an okay veggie burger! Mental note: never head into a different city without an idea of where to go for dinner!
-the most beautiful Supermoon lighting our whole way home!
-getting my Tibby guy back from my parents!
-waking up with a bit of a cold - but boy, am I fighting this thing! Go, go, iron immune system!
-going out to support our competitive dancers from Angela Maracle Studios at Send Off - they did so well!
-going out for dinner - again!
-heading to three different restaurants before deciding on the Winchester Arms.
-finding it hilarious that the woman who works (owns?) the restaurant we really wanted to go to - Toro Sushi (which is apparently closed on Sundays) - was eating at the Winchester Arms! Haha!
-watching Amazing Race with the fam!
-back to school for the kids!
-trying to catch up on laundry for me!

It's been busy, good, and bad all rolled into one. I'm still trying to catch up on my rest and sleep.
