Lazy Perogy Casserole and Avery gets a job!


What a big day for Avery today! There was no sleeping in for us this morning since we had to get him to his Challenger British soccer camp. It's full days of soccer from 9-4 all week. The fact that it's outside all day with no indoor breaks, or even much shade aside from lunch hour under the trees or the couple of umbrella tents they have set up. It's well into the 30s (celsius) with the humidex this week, so I was a bit worried about him and the amount of water he had (can't help it, I'm a mama!). I stopped by part way through the morning to bring him a third large stainless steel water bottle. When I got there I watched him for a while from the van and he looked so happy and comfortable. Once I saw them head over for a water break I brought the water to him and he was chatting nonstop about how awesome the camp is. I think this is going to great for his soccer confidence! Well worth the $42/day price tag. :)



Guess what else happened for Avery today? He started his very first job! :D My boy is now delivering the local paper. I went with him today just to make sure he didn't run into any problems (there's that mama thing again!), but he totally didn't need me there. He was finished in no time, and pretty much collapsed on the couch after he had his shower. That was a long day for him! I am so proud of that kid. He's growing up so quickly.. sniff, sniff. It's so bittersweet. I still think of him as that chubby, big-cheeked, curly topped, blond haired, blue eyed Cheeky Charlie. ♥

Dinner tonight was another huge hit! Everyone in the house gobbled theirs up, and the boys even begged for huge second helpings. Tiernan's opinion? "I could eat this for every meal of every day for a YEAR!" Haha. The Lazy Perogy Casserole (I think "lazy" is my theme for the week - yesterday's lasagna was considered lazy, too.) I made used to be in regular rotation wayyyy back when the kids were teeny.. before I was even pregnant with Rhianna - back when we still ate meat. I sort of forgot about it until I found my old food blog (it's terrible.. don't look too hard!) and saw it on there. I think it'll be going back into rotation again or I'll have some very disappointed children on my hands. I served it with some tin foil oven roasted veggies - asparagus (won't do that one roasted again!), parsnips, carrots, Spanish onion and zucchini seasoned with garlic and thyme in margarine, and some veggie sausages. A very satisfying meal. :) The picture pretty much sucks, though - we watched 'Whispers of the Heart' while we ate, so the lighting is terrible.



Lazy Perogy Casserole

15 whole wheat lasagna noodles

3 lbs of red potatoes, peeled and halved or quartered
4 tbsp butter
splash or two of milk
2 cups cheddar cheese, grated
1 1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp freshly ground black pepper

1/2 cup butter
2 yellow onions, sliced

Preheat oven to 350.

Cook the noodles according to package directions. Once they're cooked, drain well.

Meanwhile, put the potatoes into a pot of water and bring to a boil. Cook until tender. Drain and remove from heat. Add the butter, milk, salt, pepper, garlic powder, and cheddar cheese. Mash well and set aside.

In a small saucepan, melt the 1/2 cup butter. Add the onions, and cook on medium until the onions have caramelized.

Prepare the casserole as follows:

Spray a lasagna pan with some cooking spray. Layer 5 lasagna noodles on the bottom of the pan to cover it. Spread half of the mashed potato mixture over top (I find a fork works best). Add another layer of 5 lasagna noodles, and top it with the second half of the mashed potato mixture. Top the potatoes with the last 5 lasagna noodles. Pour the butter and onions evenly overtop, making sure the spread the butter around.

Cover the dish with foil and cook for 30 minutes. Remove from the oven and let it stand for 10 minutes before cutting it into slices. Serve with sour cream.

Repeats FTW!

Avery was super pumped that my cousin Derek, his wife Marion, and my parents came out to watch one of his outdoor soccer matches. He was pretty disappointed that his team lost, but he had some great plays, and I'm very proud of him. He starts at a British style soccer (okay, football!) camp next week, so we're trying to convince them all to come to next week's game, too. It'll be neat to see if Avery has any changes in his playing after having a couple of days of 9-4 camp! Hopefully he's not too exhausted from having played all day in this heat to partake in the evening match... eeep. Before we headed out for the game, we had dinner at our place. No photos taken of the food because it was all repeats. We had black bean slider burgers, alfredo fries (but this time with a variety of new potatoes instead of fingerling), and leftover coleslaw from last night. For dessert we just had some Skor bit cookies (without the chocolate chips) that I baked last night. Simple, but delicious. :)

Tomorrow is the very last day of school for my kids. Next year means grade 7 for Avery, grade 5 for Tiernan and grade 3 for Rhianna. Our babies are growing up so fast, and making us so proud - you should have seen their report cards! Summer fun, here we come!

We're alive and well!

I have been such a terrible blogger! June is typically a whirlwind, and this year is no different. It's been all wonderful though, so I'm not complaining.

So what exactly have we been up to? Well...



There has been canoeing on the Bay of Quinte!



There have been cousins visiting from Northern Ireland!



There was Dance Recital day for my two youngest kiddos.



There have been long walks along the trails and on the docks at the marina to drool over the boats.



There was Summer Solstice and all of the traditions it brings us!



And there was lots of crazy family antics!

This was only to name some of the fun. There was also a few different birthday parties, Father's Day, some soccer games for the biggest boy, watching of So You Think You Can Dance & SYTYCDCanada and more stops at playgrounds. This makes me even more excited for the adventures that await us this summer! Only three more days of school left. It's hard to believe.

Yes, we have also been eating delicious food. I admit to quite a few repeat dinners - ones that are pretty easy to throw together, along with some BBQs at my parents' house. I have made a few blog worthy items and I plan on writing a new entry tonight to include those. For now, I'm going to do some dishes and then maybe head out for a bike ride since it's not raining (yet!). They've been promising rain all week, but so far we haven't had much at all.

French Onion Soup FTW!

Dinner last night was a complete write off. Southern Ontario was warm. Actually, warm is an understatement! It was hot, humid, sticky and gross. I'm not a fan of the heat and humidity and honestly never have been (unless I'm at the beach!). The humidity around here is painful, but I knew what I was getting into when we moved out here. I refused to turn on the oven or even make anything to eat, so we quickly got ready when the kids got home from school, and Kyle got home from work and headed out for a bite to eat. Everyone except for me chowed down on BK veggie burgers, and I opted for a Quiznos sub. Dinner done, and no guilt. ;)


Avery had his first soccer game (#13!) of the season in the 35C heat. Kyle's the assistant coach so that left me tending to the other two rather whiney children. Have I mentioned that none of us enjoy the heat? Tiernan is the worst out of everybody, but that doesn't surprise me in the least considering how fair he is. My little blondie. Rhianna handles it better than her siblings... she just doesn't like being in the company of bugs! It's always something with kids, isn't it? After a few moments, they got over the heat and bugs and had some fun kicking around Avery's soccer ball and making new friends. :)

Today wasn't quite as warm, and the high winds helped cool the air down a bit. Tiernan had been asking me for a while if I could make some French Onion Soup (his favourite soup that I make), so today was the day. The best part is, it doesn't put a whole lot of heat off into the house. And it smells so amazingly yummy while the onions are being caramelized! I got the recipe a long time ago from Jamie Oliver (love him!). I was going to make mango smoothies to go with it, but we ran out of time - I don't think anyone missed them too much.



French Onion Soup

2 tbsp butter
2 tbsp olive oil
a handful of sage leaves
6 cloves garlic, minced
5 onions, sliced (different varieties... I used vidalia, yellow, sweet, white, and baby)
sea salt and freshly ground black pepper, to taste
2 litres veggie broth (I added a bit more.. depends on the size of the onions)
2cm thick slices of good quality stale bread
aged white cheddar, grated
worcestershire sauce (vegetarian friendly)

Put the butter, oil, garlic and sage into a cast iron pan. Stir everything around and add the onions. Season with salt and pepper. Place a lid on the pan, leaving it slightly ajar. Cook the onions slowly on low for at least 50 minutes, removing the lid for the last 20 minutes. The onions should be soft and golden.

Add the stock and bring to a boil. Simmer for 10-15 minutes. Toast the bread on max in the oven. Place soup in the ramekins, add the bread and cover with grated cheese. Broil until golden. Drizzle with worcestershire.

Blessed Beltane, 2011!

This is one of my most favourite days of the year! A lot of our rituals we didn't do today for multiple reasons, the biggest being how busy we were and my very, very sick husband. Instead of the big feast I had planned on, we ate leftovers. There was no new Maypole, no Goddess bread and definitely no bonfire. There was milk for the fairies, our beautiful altar and time spent outside. Tonight there was also be Beltane stories with the kids.

Avery's indoor soccer team had a wind up today with a parent vs kid game, pizza/fruit/cookies/chips lunch and lots of great conversations. Kyle even tried playing soccer for a while, but ended up in pretty rough shape after the fact. Rhianna jumped in and played on the 'parent' team and really dug in there. That girl is fierce! Tiernan, like Kyle, played for a bit before having to sit out again. His lungs just aren't back to normal yet. It was fun to get together with all of the soccer families one last time to wrap up the season. Avery was happy to have that time with his teammates. I'm glad we all ended up going!

Some sad news today, though. We have two pet rats, Rhi and Ratatta. I discovered that our poor little rattie, Rhi, broke her little hand. It isn't swollen or discolored, so I'm hoping that's a good sign. However, she is squeaking a lot and it refusing to use her hand at all. It's the saddest thing to watch. :( I really hope it heals up quickly. She will definitely be getting lots of gentle loving from all of us. Having pets can be so difficult sometimes.

I can't wait for the raspberries this year. I planted it last year, but it was already a second year plant, so I got some raspberries from it. This year I'm hoping for even more! Raspberries are my favourite.

And last, but certainly not least... Rhianna's baby dragon. You can't really tell in the photo, but he has just hatched from an egg. Seemed very fitting for Beltane seeing as it's main focus is on fertility.



All in all it's been a pretty fantastic Beltane. Now I just wish for a healthy family, and a rattie with a healed up hand. Surely both of those things are not too much to ask for.
